Cooking at home isn't nearly as big of a trend nowadays as it was during the height of the Covid-19 pandemic. In fact, Americans' total spending on dining out—or, "food away from home," as the USDA calls it—returned to normal levels by April 2021 and has continued to rebound in a major way ever since. This comes even as the cost of food away from home soars higher and higher every year–up 4.5% in 2021, another 7.7% 2022, and proceeding to rise in 2023.

But, that's not to say there aren't plenty of people out there still whipping up fresh bread or trying their hand at homemade pasta. And, these at-home chefs just may be ready to up the ante and graduate to a more highbrow category of food, such as steaks.

In order to take that leap, consulting with a professional is always encouraged. Trained chefs can help point you to the steaks that can deliver an easy win. And, more importantly, indicate which cuts may be all sizzle and no steak to a newbie cook.

"Ultimately, the best steak for home cooking depends on your personal taste preferences and cooking skills," says chef Peter Sidwell, in-house expert at the U.K.-based kitchen retailer CookServeEnjoy. "When selecting a steak, consider factors like marbling (fat content), thickness, and your preferred cooking method. No matter which steak you choose, proper seasoning, and cooking technique will help."

With that being said, there are a number of specific cuts that Sidwell and other culinary artists warn less experienced at-home chefs to avoid, altogether. Read on to find out which steaks are likely to be the toughest to tackle in the kitchen.

1

Round Steaks

"Round steaks (eye of the round, top round, bottom round) typically have the least amount of fat marbling, which can make them less tasty and more difficult to cook when compared to fattier cuts," explains Walter Nunez, executive chef at The Rex Steakhouse in Redondo Beach, Calif. These slices come straight from the rear and hind leg of the cow, an area which experiences a lot of movement and is therefore a tighter muscle, making for tougher beef.

"Cooking these at home takes a lot of patience and time since they're best cooked low and slow–ruling out cooking methods like grilling, reverse-searing, or cooking them on the stove top," Nunez says. Unless you're looking for a jaw workout, you are better off using these cuts for braising, stewing, or even slow cooking, according to the chef.

Specifically for eye-round steaks, chef Taylor Kearney suggests thinner cuts or a sous-vide method to combat the toughness. If you try to cook it as you would with a normal steak, "it will never come out like you think," says Kearney, vice president of culinary at Harwood Hospitality in Dallas, Texas, where he spearheads the beef program and oversees over 11 restaurants and bars, including Stillwell's Steakhouse & Bar.

Tri-Tip Steak

You may recognize this steak by its bulky, triangular shape, hence the name tri-tip. And, you may have been tempted to pick it up at the grocery store because of its reasonable price tag. But, chef Kearney warns to proceed with caution. While this steak does offer nice marbling, yielding great results hinges heavily on how you prepare and clean your cut. Similar to round or chuck cuts, tri-tip can contain a wealth of connective tissue–silvery lines of muscle fibers, which run through the meat and "eat like shoe leather," if not removed or handled properly, according to the chef.

Bone-In Ribeye & Other Bone-In Cuts

If you ask Omaha Steaks Executive Chef David Rose, he'll tell you that larger steaks such as bone-in ribeyes are kryptonite to amateur cooks. "Thicker, bigger cuts of steak (or "king cuts," as we like to call them at Omaha Steaks) can be a bit trickier to cook at home due to their sheer size," explains Rose, also a former finalist on the reality TV series Food Network Star. He says the main issue with these colossal cuts is that they're very easy and common to burn the outside of the steak before the inside reaches the desired doneness.

The actual bone within a bone-in cut isn't doing you any favors, either. While the bone is thought to enhance the meat's overall flavor, it also acts as an insulator, causing uneven cooking. The meat closest to the bone will cook more slowly than the rest.

Chef Nunez adds that you should avoid cooking any kind of bone-in steak in a pan, because "it's difficult to get a good sear with the bone in the way," he says.

Skirt, Flank, & Hanger Steak

Now, this one is a bit controversial. Some chefs love these thin-cut steaks because they're inexpensive, rich in flavor, and cook up in a flash on a grill or cast iron skillet. Others say that trying to cook them just right–somewhere between over and underdone–is much like trying to balance on a tightrope.

"Both flank and skirt steaks, while flavorful, are also cuts of beef that are known to be tougher in texture, making them potentially difficult to cook at home–unless you have a grill that can get really hot or you're willing to trip the smoke alarm," says Nunez. "With these cuts, you have to be very careful to not overcook them. In fact, anything beyond medium rare is considered overdone for these cuts–otherwise, you'll end up with a very tough piece of meat."

Hanger steak, in particular, can turn out nicely using "slow cooking methods like braising or stewing," according to Sidwell. But, if you don't have the time or patience for these more leisurely cooking methods, it might be best to avoid the tough steak, altogether. Although hanger steak is delicious, flavorsome, and his own personal favorite, Sidwell notes that "it can be tricky to cook evenly due to its irregular shape," and is "best suited for experienced cooks who are comfortable with uneven cooking."

Strip Steak

The strip steak operates under several different aliases including ambassador steak, Kansas City strip, Omaha strip, and, most famously, the New York strip. It is sliced from the short loin of the cow and cooks up nicely, given its firm and tender physique and lack of bone (the majority of the time it is served boneless).

So, what's the problem then? Chef Nunez's hesitation stems from the price of this esteemed cut. All of these admirable qualities makes the New York strip one of the most expensive steaks on the market—and, one you don't want to risk ruining and wasting as a novice chef.

"We serve New York and Kansas City strip steaks at The Rex and they're a specialty of ours, but these aren't necessarily cuts I would encourage people to make at home unless you're confident in your cooking skills," says Nunez. "I would save these cuts for a steakhouse experience—there's nothing worse than overcooking or burning an expensive cut of meat and not being able to enjoy it."

If you have the gall and you want to give it a go, the chef recommends applying a reverse searing method with the New York strip–a technique he calls "very forgiving."

Sausage has a long and storied history all over western civilization. There are very few foods that permeate every single meal of the day like sausage does. You could have sausage for breakfast, lunch, and dinner, and none of the meals would be out of place, and it's easy to see why. 

The incredible thing about sausage is the unique ability to control both the fat content and flavor of your meat by just picking the right one. 80/20? 70/30? Chicken? Pork? Lamb? Fennel? Smoked? Sausage has you covered. 

Sausage was also among the first meats to be "Beyonded," if you will. The vegan sausage is a pioneer in making plant-based meat alternatives go mainstream. 

Among the many different kinds of sausages available today, perhaps the most common and easiest to find at the supermarket is the classic American breakfast sausage. The freezer aisle is often stocked with options, and there are many factors to consider when choosing the one that's right for you.

"I am particular with the type of sausage I pick up at the store, as many brands are high in saturated fat, which has been linked to heart disease," says Toby Amidor, MS, RD, the Wall Street Journal best-selling author of The Family Immunity Cookbook. "They also are high in sodium and some even have quite a bit of sugar added."

Amidor says she prefers "better-for-you brands" made with lower fat meats over plant-based alternatives. In particular, she recommends products from Applegate Farms, which are made from humanely raised animals and contain no antibiotics and no nitrites. 

With that in mind, I set out to find the best-tasting frozen sausage available. I tried six different brands—some made with real meat, others not so much—to figure out what you should be putting on your plate! I cooked each product according to the directions on the package, and evaluated every one based on taste, appearance, and preparation method. If given the choice between the microwave and the stovetop, I opted for the stove to ensure that each item gets the best showing possible.

So, it has to taste good, look good, and be easy to cook in order to win. Here's how each brand fared, ranked in descending order from my least favorite to the absolute best-tasting sausage of all.

Beyond Breakfast Sausage

Beyond Meat was the first brand to start the massive plant-based meat craze, so hopefully its jump start on the competition will yield some good flavor. You can find these plant-based sausage patties at many retailers. I got mine at Giant for $5.29.

The Prep: Put this in a cast-iron pan or a frying pan and cook for four to five minutes on each side. Easy peasy, but you are investing some pan cleaning time into this. 

Beyond Breakfast Sausage patty

The Look: You might be saying, "Robby, you burned that." Yes. Yes, I did. Charring aside, though, this faux meat has the look and the thickness of a genuine sausage patty. It's got that little fatty glisten that reminds you of the real deal, too. 

The Taste: The texture is a little too soft to remind me of a real sausage. The real thing has a bit of a chew to it. This is a solid and soft texture without those little inconsistencies and imperfections that remind you of actual meat. The flavor is great, but it doesn't taste likef a breakfast sausage. When I think of breakfast sausage, I think maple, maybe some sage, brown sugar. This has the flavor readings of something more akin to chorizo, but it isn't quite there, either. Overall, this seems more like a lunch or dinner sausage in a breakfast patty form.

We all know what ole Joe can do in the freezer aisle, and this time, your favorite specialty grocer is in the sausage game. For $3.29, these breakfast patties are a steal.

The Prep: Turn a skillet on medium heat and cook for five to five minutes on each side. The directions explicitly say to go from frozen to heat directly, for better or worse. But, in terms of simplicity, it doesn't get much easier.

The Look: The cook time didn't provide the golden-brown edges I was going for, but it's still got that inviting, fatty glisten I mentioned earlier. A sausage should be a little greasy, and this patty has that look down. 

The Taste: I think some flavor was lost to the freezer, which happens, but the chicken taste comes through nicely, and the spices accompany it well while still reminding you of a breakfast sausage. The real flaw in this is that you're putting meat that was frozen directly onto a hot pan. It's going to be a little off in the taste department, as a result. There's a reason your mom always asked you to put the chicken on the counter to defrost.

Applegate produces a wide range of breakfast sausages, including this new chicken and sage variety. A one-pound bag retails for $12.99 at Harris Teeter. It's also available at select Target and Walmart locations. 

The Prep: Throw this in a pan, cook for three minutes on each side with medium heat. Pretty much as easy as it gets, and this approach doesn't give you a flabby, microwaved sausage. 

Applegate Chicken & Sage Sausage patty

The Look: A little wrinkly. However, it looks like a sausage, and smells like a sausage. Putting this on my griddle made the whole kitchen smell like sage, which was a lovely way to start the morning. 

The Taste: The flavors of the sage and the chicken come through beautifully and really give you the feeling of a breakfast sausage. Texturally, though, this is lacking, even compared to some of the plant-based products on this list. It comes off a little rubbery, which is unfortunate given how great it tastes. 

I understand why this sausage came precooked, because it is chicken. But, because of that, heating it up will overcook it. This leaves you with no other option but to eat it overcooked, which is a shame.

Morningstar Farms Original Sausage Patties

Morningstar Farms provides "a meatless spin on America's favorite foods," according to its website. These 100% plant-protein patties are a classic example. An eight-ounce bag cost me $5.39 at Giant.

The Prep: Pretty much the same as the rest of the ones you prepare on the stove.

The Look: Crispy and delicious. It's definitely more well done than other sausages on this list, but since it's plants and not meat, you don't have to be as concerned with temperature outside of just making it warm. But, this looks inviting, and it definitely was. 

The Taste: This isn't tasty for frozen food, or tasty for plant-based food. This is just tasty. You have a beautiful crust on the outside that provides a great crunch for that starchy goodness in the middle. However, I fail to see why this is even advertised as sausage. It's largely made of soy and wheat, and that's what comes through. To Morningstar's credit, the spices inside are also breakfast sausage-adjacent. However, this is a fritter, not a sausage.

Johnsonville Pork Sausage Patties

I cannot even explain my excitement to finally eat some pork. So far, I've been testing reputedly healthier, white meat and plant-based options, which are all great. But, this is sausage we're talking about. Healthy options taste great, and treat your body well, but there's nothing like a big slab of pork. These "premium" pork sausages from Johnsonville retail for $4.99 at Target. 

The Prep: Because this product comes raw, the cooking time is a little longer in the pan, but not dramatically so. It's about five minutes on each side. Ten minutes isn't the end of the world, but it's also dramatically longer than any of these other products.

The Look: Now, that is a sausage. The outside crisped up wonderfully, and gives you a golden brown allure that begs you to dig in. I apologized for the sausage being cut in half in the accompanying photo. This sausage comes raw, so I wanted to make sure I wasn't eating raw pork. 

The Taste: Spot on. The crispy outside, coupled with that salty, porky flavor inside, makes this a decadent and delicious bite. I have tried all of these wonderfully arranged and well thought-out plant-based patties. Hours upon hours of work have gone into engineering these plant-based products to emulate sausage with a wonderful flavor, and Johnsonville just blew all of them away, simply by virtue of being the real deal—well, all of them except for one.

These plant-based patties, courtesy of Whole Foods' store brand 365, retails for $3.99. For a six-pack, that's a pretty good deal. Looking at the nutrition info, it's also exceptionally healthy! 

The Prep: Throw this on a skillet for four to five minutes, and you're done. That's as easy as it gets without using your microwave.

The Look: Crispy and inviting. But I won't lie, in the context of sausage, this looks like a hockey puck. Fortunately, it didn't taste like one. 

The Taste: I thought I was eating the wrong sausage when I saw this was plant-based. I'm not that person that goes, "Oh wow, it tastes just like meat!" That's because it never tastes just like meat. Plant-based products just aren't there yet.  However, this tastes, dare I say, better. The best part is that it maintains that inconsistency and chew that a great, real-deal breakfast sausage has. The spicing is perfect, as well. You get a perfect little aroma of everything the manufacturer wants you to taste without the flavor being overpowering or exceptionally salty like some other entries on this list. 

Excellent work, Whole Foods. This is a plant-based product at the top of its game. Between the nutrition, the price, and the exceptional flavor, there's no need to buy a different sausage from the freezer ever again.

Americans love to think up inventive new words and phrases to describe their favorite things, especially when it comes to food. And while not all of those terms end up catching on, some have become so popular and universally recognized that Merriam-Webster—the most prominent publisher of dictionaries—just gave them the official stamp of approval.

Merriam-Webster announced this week that it has expanded its dictionary with a whopping 690 new words and definitions. The publisher also released a select sample of the new additions, including several major food-related terms that didn't have the honor of being recognized by Merriam-Webster before now.

One of the most notable new terms is "smashburger," which Merriam-Webster defines as "a hamburger patty that is pressed thin onto a heated pan or griddle at the start of cooking." When done right, this cooking method creates a crispy brown crust encasing juicy, perfectly cooked beef. A range of different major fast-food chains serve these types of burgers, including Freddy's, Steak n' Shake, and, of course, Smashburger.

On a different note, some of the new words are heavily associated with food, but can also be applied in a wide range of different contexts. "Chef's kiss," for example, is another exciting addition to the standard English language. The publisher defines the term as "a gesture of satisfaction or approval made by kissing the fingertips of one hand and then spreading the fingers with an outward motion." People can use this gesture to show their appreciation for food, of course, as well as anything else that strikes their fancy.

Similarly, Merriam-Webster just added a new slang term, "bussin'," that can be used to describe anything that's "extremely good" or "excellent." However, the definition notes that the term is used especially to point out when something is "delicious" or "tasty."

"Those McDonald's fries do be bussin', though," was an example sentence that Merriam-Webster provided for the term.

Here are six other food-related terms and definitions just announced by Merriam-Webster:

  • zhuzh (noun): a small improvement, adjustment, or addition that completes the overall look, taste, etc. of something; (verb): to improve in flavor or appearance by way of a small improvement, adjustment, or addition — often used with up
  • stagiaire (noun): a usually unpaid intern working in a professional kitchen as part of their training to become a chef
  • stage (noun): a usually unpaid internship in a professional kitchen that is part of a chef's training
  • cheffy (adjective): characteristic of or befitting a professional chef (as in showiness, complexity, or exoticness)
  • emping (noun): a slightly bitter cracker or chip popular in Indonesia that is made from the dried flattened seed of a melinjo tree (Gnetum gnemon)
  • jollof rice (noun): a West African dish of rice cooked in a sauce of tomatoes and onions seasoned usually with garlic, thyme, hot pepper, and other spices and often accompanied by meat, fish, or vegetables

    Because Merriam-Webster didn't list all of the 690 new words and definitions in the announcement, there may be even more newly added food terms that fans can discover in the publisher's catalog.

    "We're very excited by this new batch of words," Peter Sokolowski, editor at large at Merriam-Webster, said in a statement. "We hope there is as much insight and satisfaction in reading them as we got from defining them."

    This creamy tomato basil sauce may taste rich and decadent, but it comes with higher fat, sugar, and sodium than many other pasta sauces at the store. With cream as the second ingredient, each half-cup serving has three grams of saturated fat, or 13% of the recommended daily limit.

    The third ingredient on the list is sugar, giving each serving three grams of added sugar. It's also higher in sodium than many other pasta sauces, with 460 milligrams, or 20% of the daily value (DV). With all three of these nutrients (saturated fat, sodium, and sugar) being high in this sauce, finding another option may be a healthier choice.

At 610 milligrams of sodium, just half a cup of sauce has 25% of the recommended DV. Not to mention the 9 grams of sugar and 5 grams of saturated fat in each serving as well.

    "One of the main reasons why Del Monte Traditional Pasta Sauce is considered unhealthy is its high sodium content," says Wan Na Chun, MPH, RD, CPT of One Pot Wellness. One-half cup of this sauce has 590 milligrams of sodium or 26% of the recommended daily intake. "Consuming too much sodium can lead to bloating, water retention, and an increased risk of high blood pressure and heart disease," says Chun.

    To add to the high sodium, the third ingredient in this pasta sauce is high fructose corn syrup (HFCS). "HFCS has been linked to health concerns like fatty liver, high triglycerides, insulin resistance, high blood sugar, and an increased risk of type 2 diabetes," says Chun.

    Instead of just including high-quality olive oil, most of the oil in this sauce comes from soybean oil, which is higher in omega-6 fatty acids. While research has found that replacing saturated fat with omega-6 fatty acids is beneficial to reducing the risk of heart disease, and may not be as inflammatory as once thought, including just olive oil as the fat source would be a better choice with this pasta sauce.

While this may not seem like an incredibly high amount, keep in mind that most serving sizes for pasta sauce are half a cup, not a quarter. If you're enjoying half a cup of this sauce with your pasta, the calories, fat, and sodium start to add up quickly.

    Shoppers have been waiting with bated breath for news on whether Costco plans to raise its membership fees, especially since company leaders have been hinting for months that an increase is in the cards. The chain just confirmed that it is still planning to raise its rates, but customers will have to keep waiting for more details on the timeline.

    Costco executives held an earnings call this week, detailing the chain's performance from the latest quarter and some of its plans for the future. When Costco CFO Richard Galanti was asked if they plan to raise membership fees, he gave the same answer he's already given multiple times this year: "it's a question of when, not if."

    Costco has historically raised membership fees about every five years and seven months, with the most recent of these increases taking effect in June 2017. If the company wanted to stick to its schedule, the higher prices for memberships are technically overdue. Galanti acknowledged that Costco has waited longer than usual this time around to raise its rates, but said consumers will see an increase eventually. However, he refused to provide more details on the timing.

    "We can't really tell you if it's in our plans or not. We'll let you know when we know…So, you know, stay tuned. We'll keep you posted. But there's not a whole lot I can tell you about that," he said.

    Galanti explained that Costco does take the state of the economy into account when considering its rates. And as Costco got closer and closer to that five-and-a-half-year mark following its June 2017 fee increase, headlines about inflation and the economy were rampant. Galanti added that Costco is content to hold off on raising rates for the time being since the company is "doing great" and has "great loyalty."

    "If we wait a little longer, so be it. And that's kind of how we feel right now."

    In the meantime, members have some exciting new shopping features to look forward to. During the call, Galanti detailed some ongoing upgrades to the Costco app and website that will make shopping at the warehouse club easier than ever. These include adding in-warehouse shopping tools to the app, like a digital membership card, a warehouse inventory search feature, prices for nearby gas stations, and the ability to manage shopping lists.

Now, they can even eat like her, thanks to a brand-new Kraft Heinz condiment inspired by the latest viral Taylor Swift moment.

    This past Sunday, Sept. 24, Swift was spotted cheering on Kansas City Chiefs tight end Travis Kelce amid rumors that the two have struck up a romance (neither have directly confirmed the rumblings, but Swift was seen celebrating with Kelce after the Chiefs' win on Sunday). During the game, a fan account (@tswifterastour) posted a photo of the singer with a plate of chicken and condiments inside Kelce's Arrowhead Stadium suite with the caption: "Taylor Swift was eating a piece of chicken with ketchup and seemingly ranch!"

    The post quickly turned into a major meme and went viral, racking up tens of millions of views and more than 51,000 likes. Now, mere days after the momentous Chiefs game, Kraft Heinz announced on Instagram that it will start selling a new "Ketchup and Seemingly Ranch" sauce in honor of Swift's and Kelce's rumored budding relationship.

    "We know Heinz fans have an irrational love for the brand, and Swifties will do anything for their Pop queen, so it only made sense to blend the two together!" Kraft Heinz said in a statement shared with Eat This, Not That!

    The company  will release 100 limited-edition bottles of the condiment sometime in the near future. But exactly where and when customers will be able to get their hands on them has yet to be announced.  Kraft Heinz said it is "working diligently" to produce the sauce bottles so it can release them to fans as soon as possible. It also advised people to check out their Instagram page for future updates on how they can get their hands on the sauce.

     

    While Kraft Heinz has created a ketchup and ranch mashup in the past, fans were delighted by the new version of the sauce inspired by Swift and Kelce.

    "You had the opportunity to do the funniest thing ever and you did!" one fan commented on the Instagram announcement.

    "I seemingly want one," another said.
